Simple Key Lime Pie

A simple key lime pie with a Bisquick crust

Ingredients

Crust:

  • 1 c. Bisquick
  • 1/4 c. butter softened
  • 2 TB boiling water

Filling:

  • 1 can sweetened condensed milk
  • 1/2 c. lime juice
  • 1 c. whipped cream
  • 1 TB grated lime
  • 2 drops green food coloring
  • Lime slices to garnish

Instructions

Crust:

  1. Heat oven to 400.
  2. Mix bisquick and butter.
  3. Add boiling water and stir vigorously until the soft dough forms.
  4. Press into at 9 inch pie plate with fingers.
  5. Bake 8-10 minutes.
  6. Cool completely on cooling rack.

Filling:

  1. In a large bowl, beat milk and lime juice until thickened.
  2. Fold in whipped cream and grated lime.
  3. Add food coloring.
  4. Spoon into pie crust and refrigerate until set (about 2 hours).
