Loaded Potato Soup

Ingredients

  • 6 large potatoes or 8 medium
  • 2 cups potato water
  • 1 pint half and half
  • 1 cup butter
  • 2 cans cream of chicken soup
  • 3 cans cheddar cheese soup
  • 2 jars bacon bits (about 16 oz)
  • 2 TB dried chives
  • 1 TB salt
  • red pepper flakes OPTIONAL

Instructions

  1. Peel Potatoes (OPTIONAL) 

  2. Cut potatoes into cubes

  3. Boil until done, but still firm

  4. Drain ; save 2 cups in a separate bowl)

  5. In a large pot, add half and half and butter. 

  6. Cook on low for 5 minutes. 

  7. Stir occasionally.

  8. Add cream of chicken soup, cheddar cheese soup, chives, and salt. 

  9. Stir until mixed.

  10. Add potatoes and potato water. 

  11. Cook for 2 hours on low, stirring occasionally. 

  12. *OPTIONAL: Add milk to thin
