Healthy Mongolian Cauliflower Rice Bowl

This Mongolian Rice bowl is so good you'll forget it's healthy.

Ingredients

  • 1 lb bag cauliflower rice
  • 12 oz bag stir fry pepper mix
  • 1 lb skirt steak
  • 1-2 tsp garlic
  • 12 oz brussel sprouts steam bag if possible!
  • 1 bottle P.F. Chang's® Mongolian Home Menu Sauce
  • Avocado
  • Sesame seeds

Instructions

Day Before:

  1. Pour skirt steak and P.F. Chang's® Mongolian Home Menu Sauce in a ziplock bag.
  2. Marinate 4-6 hours or overnight (if possible).

Next day:

  1. Steam brussel sprouts (again, steam bags are amazing!!)
  2. Spray a large pan and cook cauliflower rice until soft.
  3. Spray another pan and cook the peppers until soft.
  4. In a third pan, brown the marinated skirt steak.
  5. Add 1-2 tsp garlic.
  6. Cook until the sauce has thickened.
  7. Assemble: Mongolian cauliflower rice, steak, peppers, brussel sprouts, avocado (optional)

  8. Sprinkle with sesame seeds.
