Blue Bunny Ice Cream Cake (Peanut Butter)

Ice cream cake is one of my most favorite desserts ever and this one is no exception! Paired with my delicious peanut butter cake? Oh yes!

Ingredients

Cake

  • ½ Cup Creamy Peanut Butter
  • ½ Cup butter softened
  • 4 eggs
  • 1 pkg butter cake mix (I used a yellow cake mix and it was still fabulous)
  • Cup water
  • 1 Blue Bunny® ice cream cake
  • Stabilized Whipped Cream for frosting the outside

Instructions

Cake:

  1. Preheat the oven to 325.
  2. Combine peanut butter and butter until fluffy.
  3. Add eggs, one at a time, mixing well after each one.
  4. Add cake mix slowly, alternating between water and mix.
  5. Stir until combined.
  6. Pour into pans.
  7. Bake for 25-30 minutes.

Assembly:

  1. Start with bottom layer of peanut butter cake.
  2. Frost generously with stabilized whipped cream.
  3. Add the Blue Bunny® ice cream cake
  4. Frost generously with stabilized whipped cream.
  5. Add top layer of peanut butter cake.
  6. Frost generously with stabilized whipped cream.
  7. Add scallops and decor if desired.
  8. Put in freezer for at least 30 minutes.
  9. Slice and enjoy!
