Lobster Bisque

Ingredients

  • 1 c. lobster meat
  • 2 TB minced onion
  • 5 TB butter
  • 2 TB flour
  • 3 C. milk
  • 1 1/2 tsp salt
  • 1 cup whipping cream
  • 3 TB fresh chives

Instructions

  1. In medium pot, saute lobster meat, onion, and butter until onions are soft.
  2. Stir flour into the pot.
  3. When all ingredients are well blended, add milk, salt, and cream.
  4. Cook over a low heat until soup has thickened.
  5. Garnish soup with green before serving.
