Kneaders Raspberry Cream Cheese Pie Recipe

Ingredients

Crust:

  • 1 c. flour
  • 1/2 tsp salt
  • 1/3 c. shortening
  • 2-3 TB cold water

Filling:

  • 16 oz cream cheese
  • 1 1/3 c. powdered sugar
  • 2 tsp vanilla
  • 2 c. whipped cream

Raspberry Coulis:

  • 12 oz raspberries
  • 1/4 tsp orange zest
  • 1/2 C sugar
  • 1/4 C lemon juice
  • 1/4 C water

Instructions

Crust:

  1. Mix flour and salt.

  2. Cut in shortening.
  3. Slowly add more water.
  4. Carefully knead.
  5. Roll out.
  6. Lay in a 8 or 9 inch pie tin.
  7. Bake at 400 for 8-10 minutes or until puffy.

Filling:

  1. In a large bowl, beat cream cheese, powdered sugar, and vanilla until light and fluffly.
  2. Fold in 2 c. whipped cream.
  3. Spread over crust and chill your Kneaders Raspberry Cream Cheese Pie.
