Key Lime Raspberry Sugar Cookies

Ingredients

Sugar Cookies

  • 1 cup butter room temperature
  • 3/4 cup vegetable oil
  • 1 1/4 cup sugar
  • 3/4 cup powdered sugar
  • 2 TB water
  • 2 eggs
  • 1/2 tsp soda
  • 1/2 tsp cream of tartar
  • 1 tsp salt
  • 5 1/2 cups flour

Vanilla frosting

  • 8 oz cream cheese softened
  • 6 TB butter softened
  • 3 cups powdered sugar
  • 1 tsp vanilla
  • 1 cup whipped cream

Instructions

Sugar Cookies

  1. Cream butter, oil, sugars, water, and eggs.

  2. In a separate bowl, combine all dry ingredients and slowly add to the butter mixture.

  3. Mix until everything is combined (dough should be a little crumbly, not sticky)

  4. Using a cookie scoop, put into balls.

  5. Spray a glass measuring cup, dip in sugar, and press cookies down.

  6. Bake at 350 for 8-9 minutes.

  7. Cool cookies. Top with vanilla frosting, raspberry sauce, and a fresh lime.

Vanilla frosting

  1. Whip 1/2 c. whipped cream ; set aside (it will make 1 cup whipping cream when whipped.)

  2. Sift powdered sugar ; set aside.

  3. Cream butter and cream cheese until smooth.

  4. Add in the vanilla.

  5. Slowly add the powdered sugar.

  6. Fold in the whipped cream.

  7. Top cookies with a generous amount of frosting.

  8. Add raspberry sauce and fresh limes.
