Peanut Butter Cupcake

Have you ever had a peanut butter cupcake? Neither had I. What a crying SHAME! How is such a thing not more readily accessible? It became my civic duty to find and create the most fabulous peanut butter cupcake. The balance of peanut butter and cupcake lovers hung in the balance!

I had made a peanut butter sheet cake before (with a peanut butter frosting) and it was pretty much the best cake ever. Literally. Feed me peanut butter all day long and I will be a happy girl.

I started scouring through recipes to see what i could create and how I could modify something I already had. I eventually settled on one from All Recipes (find it HERE and drool over her fabulous picture!)

The results were astounding. Cake = moist. Frosting = amazing. Chocolate Ganache = there, but the chocolate-hating-husband couldn’t taste it. Overall? I’d say this was a BIG FAT WIN. Again, how had I never had a peanut butter cupcake?

(And aren’t these stands cute? Found them at Pick Your Plum – love! I’m thinking of spray painting them a fabulous color – any thoughts or suggestions? This girl is indecisive…)Peanut Butter Cupcake3

Ingredients
Cake:
  • 1/2 C. Creamy Peanut Butter
  • 1/2 C. butter softened
  • 4 eggs
  • 1 pkg butter cake mix I used a yellow cake mix and it was still fabulous
  • 2/3 C. water
Frosting:
  • 1 C. creamy peanut butter
  • 1/2 C. butter softened
  • 4 C. Powdered sugar
  • 1/3 C. heavy cream I added more than 1/3
Instructions
Cake:
  1. Preheat the oven to 325.
  2. Combine peanut butter and butter until fluffy.
  3. Add eggs, one at a time, mixing well after each one.
  4. Add cake mix slowly, alternating between water and mix.
  5. Stir until combined.
  6. Pour into pans.
  7. Bake for 25-30 minutes.
Frosting:
  1. Combine peanut butter and butter - cream together until fluffy.
  2. Add the powdered sugar - mix in enough cream to make a nice consistency.

Just writing this I’m drooling. SO delicious. Such a win. Definite keeper.

    WOW. These look incredible. My little girl was allergic to peanuts for a few years and I missed peanut butter desserts so much. She grew out of the allergy and I am SO glad, now I can make these. 🙂

    when you brought these to ben’s blessing luncheon, devin had one and about died. he took 3 home!!! hahha he was obsessed! i’m so glad you posted the recipe so i can try them at home for him. hopefully i can make them as good as you!
