Easy spinach and artichoke dip
I am a SUCKER for dips, and this easy spinach and artichoke dip is SO dang good. My sister in law brought it to a party years ago and I BEGGED for the recipe. You can imagine my surprise and delight when the recipe was SUPER easy. Huzzah!!
Since then, it has been a staple at our family gatherings. This easy spinach and artichoke dip is one of my favorites for the Superbowl – I serve it next to my homemade bean dip, amazing cheeseball and homemade salsa. It is snack heaven for Kaylynn.
Spinach and artichoke dip
So here’s the thing. I might’ve added a few things to this recipe. I couldn’t help it! It started out pretty simple, so you could add anything or any veggie you’d like. Personally, I opted for red peppers and sun dried tomatoes. The red pepper gave the dip a little sweetness; the sun dried tomatoes added a little tang – it was just perfection.
Again, the only MUSTS veggies for this easy spinach and artichoke dip are the spinach and the artichoke…obviously. However, I’d love to add different colors to get a rainbow dip. Maybe do a yellow or orange pepper instead of red? Really – the options are endless! You really can’t go wrong with this easy spinach and artichoke dip. It’s THAT good.
There’s also an ongoing debate in our family about the best cracker for this amazingly easy spinach and artichoke dip.
My hubby says Triscuit.
I say Chicken in a Biscuit.
T says Ritz.
B just eats the crackers – no dip required.

Spinach and Artichoke Dip
Ingredients
- 1 14 oz can artichoke hearts drained; chopped
- 1 c. miracle whip
- 1 c. Parmesan cheese
- 1 clove garlic minced
- 1 1/2 c. spinach chopped/diced
- 1-5 sun-dried tomatoes diced small; *optional*
- 1 red pepper *optional*
Instructions
- Heat oven to 350.
- Chop artichokes, pepper, and sun-dried tomatoes.
- Blanch Spinach.
- Mix all ingredients until well blended.
- Spread in a 9 inch pie plate.
- Bake 20-25 minutes or until lightly browned.
