Scotch a Roos

These scotch a roos are some of my family’s all time favorites. They are always at family gatherings – I feel like I say that a lot. Basically, my family loves food. GOOD food.

For a LONG time, there wasn’t really a name for these delicious bars. Let me rephrase that – OUR FAMILY didn’t have a good name for them. My mom used to call them “breakfast bars” and we’d all just LAUGH. What a nutritious breakfast, right? Her response was always the best, “But there’s CEREAL in there, right?” (No one can argue with the fact that these scotch a roos are delicious for breakfast, so we always drop it.)

Family members would always request the “rice krispy bars” and we all knew what that meant. It wasn’t until high school that one of my friends called them “Scotch a roos” and it stuck. With me at least. It’s much better than “breakfast bar” or “rice krispy bar.” Much more unique and identifiable, right? (Tell me I’m right guys).

When I was on Cougarettes, the team fell in love with these bars. Not me – the bars. I had people asking me for the recipe, texting me at odd hours of the night, and bugging me NON-STOP for the recipe. Wanna know a secret? They’re NOT THAT HARD. At all.

I know that Kelsey Nixon made these babies on her TV show when she was still a student at BYU – they’re that good. Kelsey approves!

Scotch a Roos
Ingredients
- 2 c. Karo syrup
- 2 c. peanut butter crunchy or creamy
- 2 c. sugar
- 10-12 c. Rice Krispy cereal
- 1/2 bag milk chocolate chips
Instructions
- Combine Karo, peanut butter, and sugar.
- Microwave 2 minutes at a time
- Stir
- Repeat microwave for 2 minutes (3-4 more times) until smooth or boiling
- Slowly add Rice Krispy cereal
- Stir
- Pour into a large cookie sheet or muffin tins
- Melt chocolate chips.
- Stir.
- Pour on top of Rice Krispy mixture.
