When I was a teacher, we’d occasionally have a potluck lunch. Now, don’t get me wrong, the name “potluck” makes me want to gag. It a smorgasbord of crap, you never know what you’re going to get. However! There was always a shining star in the soup line – this loaded potato soup recipe was a faculty favorite. It was always requested and always delicious. My sweet friend would always make it on our request – she is a soup angel. No lies.

What makes this loaded potato soup recipe so amazing? Well, it’s not your average potato soup – that’s for sure. There’s cheese (yum), bacon (yum), and cheese (did I say cheese twice?). Yes – there’s LOTS of cheese.

I have always been a huge fan of potatoes in any soup – throw them in there! This potato soup is to die for.

The recipe calls for the potatoes to be cubed; you can leave the skin on or peel them. I opted to peel my potatoes since my potatoes were on their last leg and I didn’t want any black spots in my heaven-sent soup.

The one thing that is hard about this loaded potato soup recipe? TIME. It’s best after it’s had a few hours on the stove to simmer and thicken. Until then – you wait. Your house smells amazing (like cheese and bacon) and your tummy is rumbling, but it’s not time to eat. Yeah – those two hours were SUPER slow in my house!

Other than that, this loaded potato soup recipe is a CINCH. As long as you’re willing to wait for this amazing potato cheese bacon soup, you’ll be GOLDEN. Trust me.

Also, the hubby likes to add red pepper on top of his bowl – it’s actually quite amazing. I didn’t add it to the actual recipe because KIDS.

Disclaimer, ONE of my kids LOVES this soup – she’s 7 and she asks for seconds (sometimes thirds). It’s crazy. However, my 3 year old is NOT a fan – not because this loaded potato soup isn’t amazing, but because TODDLERS. Does any toddler love soup? Please tell me if such a toddler exists!
