If you love potatoes, cheese, and bacon, you are in for a treat! This is the worlds best potato soup! This loaded potato soup recipe is SO easy – and did I mention cheese and bacon?
When I was a teacher, we’d occasionally have a potluck lunch. Now, don’t get me wrong, the name “potluck” makes me want to gag. It a smorgasbord of crap, you never know what you’re going to get. However! There was always a shining star in the soup line – this loaded potato soup recipe was a faculty favorite. It was always requested and always delicious. My sweet friend would always make it on our request – she is a soup angel. No lies.
Worlds Best Potato Soup
The recipe calls for the potatoes to be cubed; you can leave the skin on or peel them. I opted to peel my potatoes since my potatoes were on their last leg and I didn’t want any black spots in my heaven-sent soup.
Also, the hubby likes to add red pepper on top of his bowl – it’s actually quite amazing. I didn’t add it to the actual recipe because KIDS.
Disclaimer, ONE of my kids LOVES this soup – she’s 7 and she asks for seconds (sometimes thirds). It’s crazy. However, my 3 year old is NOT a fan – not because this loaded potato soup isn’t amazing, but because TODDLERS. Does any toddler love soup? Please tell me if such a toddler exists!
Loaded Potato Soup Recipe
Loaded Potato Soup
Ingredients
- 6 large potatoes or 8 medium
- 2 cups potato water
- 1 pint half and half
- 1 cup butter
- 2 cans cream of chicken soup
- 3 cans cheddar cheese soup
- 2 jars bacon bits (about 16 oz)
- 2 TB dried chives
- 1 TB salt
- red pepper flakes OPTIONAL
Instructions
- Peel Potatoes (OPTIONAL)
- Cut potatoes into cubes
- Boil until done, but still firm
- Drain ; save 2 cups in a separate bowl)
- In a large pot, add half and half and butter.
- Cook on low for 5 minutes.
- Stir occasionally.
- Add cream of chicken soup, cheddar cheese soup, chives, and salt.
- Stir until mixed.
- Add potatoes and potato water.
- Cook for 2 hours on low, stirring occasionally.
- *OPTIONAL: Add milk to thin
