I’ve always been a huge fan of ice cream. I used to not be super particular about the brand or flavor of ice cream. Then I started being a little pickier about what I ate – it was only the BEST ice cream. Everyone raved about Blue Bunny® ice cream (have you seen all the flavors they have??), but I hadn’t ever tried it. Until now….
Then, life got a little bit better, because Blue Bunny ice cream is kind of the best. We hit up our local Walmart and spotted something new: A Blue Bunny ice cream cake – ready to go and gorgeous (you can find them online or in store!).
I grew up with an ice cream cake, so this Blue Bunny® ice cream cake intrigued me. Plus, it was vanilla bean. MMMM!
Are you ready for the steps to make your own Blue Bunny ice cream cake?
1. Bake cake of choice (peanut butter cake recipe will be listed below)
2. Buy Blue Bunny® ice cream cake of choice. (There are two flavors to choose from!)
3. Combine baked cake with Blue Bunny ice cream cake.
4. Frost with stabilized whipped cream. (Here’s Ashlee’s recipe for stabilized whipped cream!!)
Blue Bunny Ice Cream Cake (Peanut Butter)
Ingredients
Cake
- ½ Cup Creamy Peanut Butter
- ½ Cup butter softened
- 4 eggs
- 1 pkg butter cake mix (I used a yellow cake mix and it was still fabulous)
- ⅔ Cup water
- 1 Blue Bunny® ice cream cake
- Stabilized Whipped Cream for frosting the outside
Instructions
Cake:
- Preheat the oven to 325.
- Combine peanut butter and butter until fluffy.
- Add eggs, one at a time, mixing well after each one.
- Add cake mix slowly, alternating between water and mix.
- Stir until combined.
- Pour into pans.
- Bake for 25-30 minutes.
Assembly:
- Start with bottom layer of peanut butter cake.
- Frost generously with stabilized whipped cream.
- Add the Blue Bunny® ice cream cake
- Frost generously with stabilized whipped cream.
- Add top layer of peanut butter cake.
- Frost generously with stabilized whipped cream.
- Add scallops and decor if desired.
- Put in freezer for at least 30 minutes.
- Slice and enjoy!
